Chris' Famous Bean Recipe

  • 3 cups dry Pinto Beans
  • 1/2 large White Onion
  • 1/2 Red Bell Pepper
  • 1/2 Green Bell Pepper
  • 1 cup Chopped Cilantro
  • 3 Roasted Green Chilies
  • 1/2 tablespoon Paprika
  • 1 teaspoon Chili Powder
  • 1 tablespoon Cumin
  • 1 teaspoon Cayenne
  • 1 1/2 tablespoon Salt
  • 1 tablespoon Black Pepper
  • 1/2 tablespoon Tony’s Creole Seasoning
  • 1 tablespoon of Bacon Grease (or avocado oil)
  • 4 dashes of Liquid Smoke


  1. Sort dry beans to make sure there are no rocks or debris
  2. Rinse beans thoroughly
  3. Add beans to pot and fill with water
  4. Soak beans 4-6 hours or overnight
  5. Drain and rinse beans
  6. Add all ingredients to a pressure cooker
  7. Add water to cover bean by about 1/2 inch
  8. Cook on the high bean setting (30 min)
  9. Serve and enjoy

**I think they are best the next day after being refrigerated overnight.
