INGREDIENTS
- 3 cups dry Pinto Beans
- 1/2 large White Onion
- 1/2 Red Bell Pepper
- 1/2 Green Bell Pepper
- 1 cup Chopped Cilantro
- 3 Roasted Green Chilies
- 1/2 tablespoon Paprika
- 1 teaspoon Chili Powder
- 1 tablespoon Cumin
- 1 teaspoon Cayenne
- 1 1/2 tablespoon Salt
- 1 tablespoon Black Pepper
- 1/2 tablespoon Tony’s Creole Seasoning
- 1 tablespoon of Bacon Grease (or avocado oil)
- 4 dashes of Liquid Smoke
INSTRUCTIONS
- Sort dry beans to make sure there are no rocks or debris
- Rinse beans thoroughly
- Add beans to pot and fill with water
- Soak beans 4-6 hours or overnight
- Drain and rinse beans
- Add all ingredients to a pressure cooker
- Add water to cover bean by about 1/2 inch
- Cook on the high bean setting (30 min)
- Serve and enjoy
**I think they are best the next day after being refrigerated overnight.
